Ingredients
8ozrigatonicooked
1cuppasta waterreserved from pasta
1shallotfinely diced
3-4 garlic clovesminced
1-2teaspoonred pepper flakes
½cupvodka
4oztomato paste
1cupcottage cheeseblended
2-3ozparmesan cheese
saltto taste
Instructions
In a pan over medium-low heat, add oil, garlic, shallots, and 1 teaspoon of salt. Sauté until softened.
Add red pepper flakes and stir to combine. Add tomato paste and sauté.
Add vodka, stir to combine and allow vodka to cook down, about 1-2 minutes.
Add in reserved pasta water and mix to combine. Turn down the heat to low and mix in blended cottage cheese. Continue mixing until it is fully incorporated.
Add in parmesan cheese and salt to taste. Add in cooked rigatoni and toss to combine.
Notes
The level of spiciness here depends on how much red pepper flakes you add, though. For a milder version, reduce it to ½ teaspoon, or skip it altogether if you’re sensitive to heat.
